Sponge Cake with Raspberry Jam

It's my turn to take treats into work for our Friday morning team meeting.I bought some croissants from the supermarket, but wanted to bake something too.So I made this sponge cake and some chocolate chip cookies.

Sponge Cake with Raspberry Jam

Ingredients:
- 125g butter, softened
- 250ml sugar
- 3 large eggs
- 500ml self raising flour
- 15 ml baking powder
- 2.5ml of salt
- 5ml vanilla essence
- 100ml milk
- 50 ml water

Baking Method:
1- Cream the butter and sugar together with an electric mixer until light and fluffy.
2- Add the eggs one at a time, beating well after each addition.
3- Add sifted flour, baking powder and salt.
4- Add the vanilla essence, milk and water.
5- Mix with a wooden spoon until smooth.
6- Spoon into a deep cake pan (greased).
7- Bake in a pre-heated oven at 180C for 45 minutes until golden in colour.
8- Cool completely on a cooling rack then split in the middle and fill with raspberry jam.
9- ENJOY WITH A NICE CUP OF ENGLISH TEA :o)

Chocolate Chip Cookies

Chocolate Chip Cookies

Ingredients:
- 125g butter
- 300ml light brown sugar
- 1 large egg
- 350ml flour
- milk chocolate chips
- white chocolate chips

Cooking Method:
1- Cream the butter and sugar well.
2- Beat in the egg.
3- Add the sifted flour and mix well.
4- Stir in the chocolate chips.
5- Place tablespoonfuls of dough onto a greased baking sheet and flatten slightly.
6- Bake in a pre-heated oven at 180C for 15-20 minutes.
