Roast Potatoes and Vegetables
Rob and I love roast potatoes... I roasted baby potatoes with their skin in with a large red pepper and a large courgette.
I boiled the potatoes first then tossed in olive oil and mixed herbs and basil, then placed on an oven try with the vegetables. And roasted for 50 minutes.
I think I left the red peppers in for too long, I won't keep them as long next time.
Very yummy and healthy and goes well with any meat or salad :o)
