Smarties Cookies

- 125g butter
- 250ml light brown sugar
- 1 large egg
- 350ml flour
- Smarties
- milk chocolate chips (I also added chopped KitKat and Twix)

Smarties Cookies

Cooking Method:
1- Cream the butter and sugar well.
2- Beat in the egg.
3- Add the sifted flour and mix well.
4- Stir in the chocolate chips and smarties.
5- Place tablespoonfuls of dough onto a greased baking sheet and flatten slightly.
6- Bake in a pre-heated oven at 180C for 15-20 minutes.

Organic Potato and Vegetable Curry

My organic vegetable box arrived yesterday, so I made a vegetable curry.

Potato and Vegetable Curry

- Potatoes
- Your choice of veg (carrots, courgettes, leek and onions)
- Chili
- Cumin
- Madras curry powder
- Tumaric
- Saffron
- Mixed Herbs
- Salt and pepper
- Vegetable stock
- Rice

Cooking Method:
- Fry onions and leek in olive oil
- Add the herbs and spices
- Add the vegetables
- Add vegetable stock
- Bring to the boil then simmer for 25 minutes
- Serve with rice, yoghurt and bread ... yummy :o)

It's Saturday .... so let's have a healthy start to the day :o)

Strawberry & Blackberry Smoothie

Blend strawberries, blackberries, a banana, a small pot of strawberry yoghurt and orange juice for 30 seconds.
Rob and I drank this with some wholegrain toast .... yummy :o)

Chicken breast, red onion, red peppers, courgettes and green beans.... stir fried in olive oil with herbs and black pepper.
This photo was taken before I added the chow mein sauce.Serve with noodles or rice.

Healthy Fish Supper.

I baked haddock (fish) in the oven marinated with herbs, olive oil and lemon.Served on a bed of oven baked aubergines with roast potatoes and broccoli.
