Haloumi Cheese and Tomato Toastie

For lunch today, I made haloumi cheese and tomato toasties on wholegrain bread, and served them with wholemeal pasta and salad.

Haloumi Cheese and Tomato Toastie

To make the toasties:
- Choose you preferred type of bread (I chose wholegrain buns)
- Spread with cheese spread (or mayonnasie)
- Add slices of haloumi cheese, and slices of tomato.
- Add a little pesto (optional), I added some red pepper pesto.
- Grill or toast in a sandwich toaster for a few minutes until the cheese has melted a bit.

Mediterranean Soup

I'm in a "home-made soup" mood at the moment. Today I made a Mediterranean soup to serve with the lamb burgers and home-made fries I cooked.

Sundays are for naughty eating :o)

Mediterranean Soup

Soup Ingredients:
- 1 potato
- 1 carrot
- 1 leek
- 1 red pepper
- 1 courgette (zucchini)

Bring all the vegetables to the boil.
Add salt, pepper, chili, mixed herbs and vegetable stock.
Simmer for 20 minutes, then blend and serve! Yummy :o)

Lamb Burgers, Homemade Fries and Soup

Sunday Treat!

As a Sunday treat for me and Rob, I made lamb burgers (bought from the Halal shop), with cheese and lettuce in wholemeal English muffins. Served with home-made chips (french fries), and home-made mediterranean soup.

Sundays are for naughty eating :o)

Lamb Burgers, Homemade Fries and Soup

Soup Ingredients:
- 1 potato
- 1 carrot
- 1 leek
- 1 red pepper
- 1 courgette (zucchini)

Homemade Potato & Leek Soup

I made some potato and leek soup on Monday.

It's a really simple meal to make and so tasty and healthy.

Homemade Potato & Leek Soup

Just boil some chopped up potatoes, leek and a carrot in water.

Add vegetable stock, salt, pepper and your favourite herbs and cover and simmer for 20 minutes untill all the veg are tender.

Blend in a blender for a couple of minutes, add a little butter if you like to give it more flavour.

Serve with warm bread, toast or your choice of crackers... yummy :o)
